Francesca Ciucci

Chef Francesca Ciucci is Roman by birth, in her soul and in her roots. Her journey from Vicolo del Cinque to Trastevere, passing through Testaccio and the ex-slaughterhouse, arriving at Tor Marancia - where she lives - is the source of inspiration for her dishes. She is self-taught, with an important heritage called tradition.

She loves to use territorial ingredients typical of Lazio such as guanciale, pecorino, offal, artichokes and puntarelle. Over time, she has enriched her larder by expanding the range of flavours, choosing new raw materials to process in line with her delicate sensibilities. The Ciambella Bar à Vin con Cucina is the last stage of an itinerary made with all the colours, fragrances and Roman folk songs.

Mirka Guberti

Mirka Guberti, an enthusiastic and curious sommelier from Emilia, inherited her passion for wine from her grandfather. It was with him that she experienced her first moments in the vineyard and entered this world to which, over the years, she has dedicated her love and profession. Constantly searching for new labels and new producers, she travels around France, Europe and the world to learn and understand, in order to offer the best to her customers.

After Bologna, he moved to Rome, his adopted city of 11 years. Here she worked at Glass Hostaria alongside chef Cristina Bowerman and at Pascucci al Porticciolo with chef Gianfranco Pascucci. In 2016 she founded La Ciambella Bar à Vin con Cucina: a dream come true with her wife Francesca -chef- and her friend and working partner Radion Girleanu -maître-.

Radion Girleanu

Radion's passion for dining began very early and grew daily, fuelled by his young age and determined character.
Radion discovered his talent at the Metamorfosi restaurant in Rome, with chef Roy Caceres.

His dedication to his work and his predisposition to welcome customers with reserved politeness soon allowed him to rise through the ranks and soon become one of the restaurant's key contacts.
As a member of La Ciambella, he is a true perfectionist, guided by Mirka in the dining room and Francesca in the kitchen. In charge of the bar, he personally supervises the cocktail menu - dedicated to the great classics - choosing the best products available.
